The Avocado fruit is extremely nutritious. Avocados contain a significant amount of oil consisting of ‘good’ unsaturated fats, which have a positive effect on your cholesterol levels. Avocados are commercially valuable and are cultivated in tropical and Mediterranean climates throughout the world and grow on avocado trees.
Avocados have a green-skinned, fleshy body that may be pear-shaped, egg-shaped, or spherical. Commercially avocados ripen after harvesting.

Combinations:
Sweetcorn, tomatoes, bell peppers, wasabi, cucumber, red onions, fennel, kidney beans, rocket, tarragon, chilli peppers, oranges, lemons, limes, nuts, sushi vinegar, tortilla wraps, sour cream, crème fraîche, greek yoghurt, egg, fish, crustaceans and animal proteins.

Avocado / Scrambled Egg / Spinach / Bruscetta / Pinenuts / Pomegranate (Vegetarian)
Cut an avocado in 2 halves and remove the stone, take the avocado flesh out of both halves of the avocado. (put the stone in oven by 90°C and dry for 2-3 hours).
Take both halves of avocado out of their shell, cut first half in small cubes, and grill them with a torch. Cut the second half in cubes and put them in a mixer, season with salt, pepper, chili, ginger, cardamon and sushi vinegar and mix to a fine purée.
Stir-Fry fresh spinach leaves in hot rapeseed oil, and season with black peppercorns.
Whisk an egg and cook to a scrambled egg in a frying pan and season with curcuma, a bit of salt and white peppercorns.
Roast some pine nuts by medium heat, cut pomegranate in half and take out the kernels and slice up some bread leftovers and roast in the oven with some olive oil.
Plating:
Take a big spoon of the avocado purée on a plate then take a small pan and press the avocado puree flat, and you will have a beautifully round avocado pattern.
Place both avocado shells on top of the avocado puree pattern, stuff the shells with the spinach, and place the scrambled egg on top of that. Place some grilled avocado cubes on top of the scrambled egg and garnish the entire plate with the pine kernels and pomegranate kernels. Finish off by grating the roasted dried avocado stone over the dish.
