The mild and easy likable flavor and the easy to grow character, makes cauliflower to one of the most popular vegetables around the globe. The best known variety is the white cauliflower. In addition to the white cauliflower, there are also lime green, yellow -orange and reddish-purple cauliflowers. part of the family are also broccoli and romanesco.


Basic techniques: blanching, boiling, stewing, braising, grilling, marinating, puréeing, grating, stir-frying, smoking, roasting.


Taste combinations: all kinds of meats and fish, (fresh, dried, cured) cheeses, almost every spice combination (all along the spice route from mediterranen, african, middle eastern, indian and asian heritage), nuts and seeds, dairies and butter and so on.


The word "cauliflower" derives from the Italian cavolfiore, meaning "cabbage flower".

Cauliflower originates from Cyprus and made its way from there into the arabic and european/mediterranen world. The english brought cauliflower to India and the Asian world.


Raw cauliflower is 92% water, 5% carbohydrates, 2% protein, and contains negligible fat

a 100 gram reference amount of raw cauliflower provides 25 calories, and has a high content of vitamin C and moderate levels of several B vitamins and vitamin K .

Cauliflower with its mild taste can be cooked and combined with so many foods and flavors thats it has become an all rounder in our kitchens, and one of the most liked vegetables on the globe


 

Here a few tips on how to make some very quick, easy and delicious cauliflower dishes.


Caramelized Cauliflower

Probably the easiest and tastiest way of preparing and eating cauliflower, with the lowest

percentage on food waste.

Take 1 cauliflower and pull of the biggest green leaves, leaving the smaller green leaves on the plant. Cut the cauliflower in half.

Put the cauliflower on a baking tray and put in the oven by 200°C for 25 - 30 Minutes

The natural sugars in the cauliflower will give it a golden dark brown color, and sweet flavor

After taking the cauliflower out of the oven you can season it with some fresh good quality oil and with salt & pepper

Also combined with some fresh roasted nuts or seeds, or with any kind of spices you fancy you can add some additional flavor.


Cauliflower Cous-Cous

Take a whole Cauliflower and take of the leaves, then put it in a blender and blend until small crumbles.

Prepare the cauliflower crumble similar to a risotto, with stir frying some onions and garlic in a pan, mixing the cauliflower to it, and top it up with some vegetable stock and some grated Lime zests and leave to simmer for a few minutes, season with whatever kind of spices you prefer, and finish it off with some fresh grated hard cheese, like parmesan, manchego, or sbrinz. Some fresh chopped herbs, roasted nuts or seeds can give the extra additional flavor and crunch.
